Our ancient Mennonite derived Quesadilla cheese is uniquely crafted and cultured to create brilliant and authentically rich flavor tones. Its unique texture is semi-firm with a pale-yellow color –a departure from other white Mexican cheeses. It reveals a mild, buttery taste with hints of cheddar-like sharpness typical of this aged cheese. We call it Quesadilla.
In Mexico, this cheese is commonly referred to as “Menonita” or “Chihuahua” signifying its long history dating back to 1920 when a group of Mennonites settled in the Mexican state of Chihuahua. Enriched not only by their agricultural skills, the Mennonites planted their cheese making skills in Chihuahua. The popularity of their “Menonita” cheese spread throughout the country. Later, referenced by its origin, “Queso Chihuahua” evolved into a household name. Here in America, its flavor and melting characteristics made it a perfect match for the cheese grilled tortillas we call Quesadillas.
Uses & Applications
• We have crafted this vibrant melting cheese to provide richness and suppleness that is preferred in baking dishes, and widely used in fondues, pizza, lasagna, casserole dishes, queso fundido, omelets, hamburgers and quesadillas.
• A great alternative for cheeseboards accompanied with veggies, fruits, crackers and nuts.
• Pair with a medium to full bodied red wine with a hint of oak and long, fruit-filled finish.
