We call it Quesadilla. In Mexico, this cheese is commonly referred to as “Menonita” or “Chihuahua” signifying its long history dating back to 1920 when a group of Mennonites settled in the Mexican state of Chihuahua. Enriched not only by their agricultural skills, the Mennonites planted their cheese making skills in Chihuahua. The popularity of their “Menonita” cheese spread throughout the country. Later, referenced by its origin, “Queso Chihuahua” evolved into a household name. Here in America, its avor and melting characteristics made it a perfect match for the cheese lled tortillas we call Quesadillas.
